A delicious accompaniment to fresh fish fillets or roasted pork
Makes 6 Servings
4 large baking apples
1/3 cup (75 mL) red onion, finely chopped
2 tsp (10 mL) Jalapeno pepper, finely chopped
3 Tbsp (45 mL) freshly squeezed lime juice
2 Tbsp (30 mL) fresh cilantro, chopped
1 Tbsp (15 mL) canola oil
6 white fish fillets such as tilapia, halibut or sole
1. Prepare apples for roasting: Preheat oven to 400°F (200°C). Wash, core and cut apples in half. Do not peel. Place apples on baking sheet and roast for 30-40 minutes or until just soft and golden. Remove from heat, cool and dice finely.
2. While apples roast, in medium-sized bowl combine onion, Jalapeno pepper, lime juice and cilantro. Add prepared apples, stir to combine and refrigerate until serving.
3. Heat oil in large skillet. Pan fry fish until golden and flakes easily with fork, about 5 minutes per side. Serve warm accompanied by fresh salsa.
